Delicious Gluten-Free Cheesy Garlic Pull Apart Bread

Cheesy garlic pull-apart bread is a recipe from the book The Elements of Baking by Katarina Cermalj. She is the creator of the blog The Loopy Whisk and has a PhD in Inorganic Chemistry. I have made quite a few of her recipes and have loved all of them. Each one has been beautifully written and easy to follow.

When I saw this recipe, I immediately wanted to try it. I love garlic bread, and my family always puts cheese of some sort on our garlic bread so to see a recipe that mixes both the cheese and the garlic with a brioche bread I was very excited. And the part that excited me the most was the fact that it was gluten-free. With so many people in my family being gluten-free I always keep my eyes open for recipes that I can make for them.

This recipe is easy to follow, although I do recommend making sure that you have all of the ingredients measured out and ready to go for both the bread and the butter and make the butter before you start the dough. I did not do that, and it messed me up a lot. I had to rush to get the butter ready without the dough rising and that in turn caused problems because I didn’t have all the ingredients on hand that I needed. Also, make sure you use garlic and not onion.

Once you have the ingredients measured out, combine all the ingredients for the dough and mix until all of them are mixed together, then knead for 5 to 6 minutes. While dough is mixing, combine ingredients for garlic butter. once dough is mixed. Pour it out on a lightly floured counter and smooth it out into a 12” by 12” square. Then, spread garlic butter and sprinkle cheese on it. After that is done, cut the dough into 16 even 2” pieces and stack. After you have them stacked place them in a lightly buttered bread pan.

Once you have the bread in the pan, I let mine proof for an hour and a half. Make sure you turn the oven on as soon as you start the bread proofing to give it time to heat to the right temp. Another small problem I ran into was telling when the bread was done. I followed the directions in the recipe and took it out once the tester came out clean with no dough on it. However, that was not long enough, and the bread came out gummy and didn’t look as appealing as the photo on the recipe.

Overall, it is a great recipe. Mine did not come out as great as I would have liked but that was bakers’ error on my part. Not only did I use onion powder instead of garlic powder, but I also did not bake it long enough. If made correctly, this recipe would be delicious and would easily become a favorite among my family and friends.
